1. Job Details:

2. Job Dimensions:
Budget Controlled:
Number of Staff Supervised - Direct: A team of 8 people across 2 shifts Total Staff Supervised (Direct & Indirect): A team of 420 people across 2 shifts.
3. Job Purpose:
- To plan, organize and oversee poultry processing operations in accordance with the set policies and procedures
- To manage effective utilization of manpower and machinery in processing chicken at lowest possible costs and consistent quality, safety and hygiene standards.
4. 1) Experience in slaughterhouse Production manager more than 10 Years.
5. Key Accountabilities:
KEY ACCOUNTABILITIES KEY PERFORMANCE INDICATORS
- Managing & Enhancing Production Capacity:
- Manage and upgrade the production capacity as per business plan projections
- Ensure on time fulfillment of agreed sales orders at acceptable quality levels
- Implement initiatives to improve production efficiencies and to minimize the cost of operation of poultry processing plant
- Assist Vice President Processing in preparing annual business plan and budgets for the deparment
- Plan and manage the inventory levels for packaging, process and QC consumables for processing etc
- Take spot decisions such as reallocating manpower to handle bottlenecks arising during the production process
- Prepare a maintenance plan for the PPP equipment in coordination with Manager Maintenance and ensure minimal down time in PPP by adhering to the maintenance plan
- Draft and ensure compliance to standard operating procedures for all key processes of the plant
- Adherence to the capacity enhancement plan
% Order fulfillment
- PPP expense/ 1 kg of processed output (SAR/ Kg)
- Days of inventory of packaging, process and QC consumables for processing ( in no of days of run)
- Downtime due to shortage of consumables
- Managing Quality and Yield
- Draft and implement plans to minimize the wastages in the plant operations
- Take measures to deliver consistently quality produce during the different stages of poultry processing
- Coordinate with QC team for quality control testing at various stages of the production process
- Output in Kg/ Input in Kg
- Portions Yield (%)
- No. of QC referrals in process
Manpower Planning and Managing Productivity:
- Prepare resource plan based on the annual production plan and forecasted sales orders
- Coordinate with Human Resources department for appropriate staffing levels and recruitment of personnel
- Provide proper guidance and ensure optimum utilization of manpower in the plant
- Coordinate with Vice President PPP to ensure sufficient training for competency gaps identified in the production staff Output of each sub-department (kgs)/ Actual man-hours in each sub department (hrs)
- Touch point for other departments
- Coordinate with Sales and Marketing team to understand product mix wise demand and prepare a detailed production schedule to meet the required demand of different product SKUs
- Coordinate with planning team to obtain the production schedules based on sales and marketing orders and harvesting plans of farms
- Coordinate with Manager - Maintenance and Maintenance Supervisors for execution of maintenance plan
Hygiene & safety
- Ensure that the production team adheres to the HACCP and ISO standards, including hygiene
- Manage the weekly program of the hygiene team
- Implement sanitation and safety programs

- Reporting
- Review production records and take necessary steps to rectify errors, if any, to improve quality and tonnage
- Report as per agreed frequency on BSC (SMART) using relevant performance measures
- Compliance to the specified reporting standards in terms of frequency & accuracy of data
5. Operating Environment:
Jobholder works closely with the Deputy Manager - Shift Operations, Senior Superintendent - Primary & Secondary Section to ensure a seamless production unit. Job is critical as he will be overall responsible for efficient management of the plant. The job holder works in the Primary area with live birds and could be subject to a bio security risk.
6. Communication & Working Relationships:
Internal :
- Daily communication with Vice President Processing, Deputy Manager - Shift Operations, Senior Superintendent - Primary & Secondary Section and Sales & Marketing team
- Periodic communication with the maintenance department for efficiency reports
External :
- Need based interaction with the equipment vendor for service and new developments
7. Decision Making:
- Finalize the daily production schedule and direct the shift managers for effective execution of the same.
- Help the Vice President Processing in decisions regarding process improvements, plants capacity planning, strategic planning and budgeting processes
8. Qualifications, Experience, Knowledge & Skills:
Qualifications :
- Bachelors degree in Industrial Engineering/Manufacturing/Food technology
Experience :
- 6 years experience in Food Processing environment in K.S.A. or Middle Eastern Countries, of which atleast 2 years in a managerial / semi managerial role
Job specific Skills :
- Familiarity with quality systems e.g. HACCP, TQM & ISO
- Complete understanding of the poultry plant operations
Generic Skills:
- Working knowledge of Microsoft Office ( MS-Excel, MS- PowerPoint, MS- Word and MS Outlook)
- Working knowledge of BaaN
- Working knowledge of English and Arabic
